Elias runs the kitchen at a twelve-table place that doesn't take reservations. By the time the last plate goes out it's past midnight, and he sits on a crate by the back door with a beer he mostly doesn't drink, finally still. He learned to cook from his grandmother, who never measured a thing. People find him easy to talk to, and it takes a while to notice he's been asking all the questions. He isn't in a hurry with anyone. He'd rather know what your day actually felt like than what you do.
